This chocolate choc chip muffin recipe contains legumes, veggies and fruit! Perfect for fussy eaters while bringing familiar flavours they love.
Ingredients
2 large eggs
1/3 cup maple syrup or honey
1/2 cup pumpkin/butternut squash
1/4 cup apple puree
1 ripe banana
1 cup lentils
1 cup spinach
1/4 cup milk
1+1/4 cup flour
1tsp baking powder
1/2 tsp bicarb soda
1/2 tsp salt
1/4 cup cocoa
pinch cinnamon
2 tsp vanilla
choc chips (around 50g)
optional: 8-10 scoops Base Kids
METHOD
- Heat the oven to 180 degrees and line mini cup cake tray
- Put the eggs, maple syrup, apple puree, lentils, oil, spinach, milk and vanilla in a blender and blitz until smooth liquid (the less chunks and textures the better for little eaters)
- In a separate bowl combine the flour, baking powder, bicarbonate soda, cocoa, cinnamon (and Base Kids if you're using it)
- Pour the liquid mix in with the flour mix and fold together
- Fold through choc chips
- use a small ice-cream scoop to scoop mix into the cup cake tray (we also added extra chop chip after the scoop went in)
- If using a mini cupcake tray, bake for around 13-14 mins
