No-bake choc-chip muesli bars

No-bake choc-chip muesli bars

These no-bake choc muesli bars are packed with wholesome ingredients like oats, flaxseed, and natural sweeteners, giving kids energy, fiber, and healthy fats without the unnecessary extras.

While many store-bought muesli bars can contain 30+ ingredients (including additives and preservatives), these homemade bars keep it real with just 10–11 simple ingredients most families will have in the cupboard.

Ingredients

  • 6 tbsp butter
  • 1/3 cup brown sugar
  • 1/4 cup + 2 tbsp honey
  • 1.5 tsp vanilla extract
  • 1/8 tsp salt
  • 2 cups instant oats
  • 1 3/4 cups Rice Bubbles
  • 1/4 cup flaxseed meal
  • 1/4 cup choc chips
  • Optional: 6-8 scoops Base Kids powder
Method
  1. Line a baking tray with baking paper.
  2. In a saucepan, combine butter, brown sugar, and honey. Bring to a boil, stirring constantly.
  3. Reduce heat and simmer for about 2 minutes, until the sugar has dissolved.
  4. Remove from heat and stir in vanilla extract and salt.
  5. Add oats, rice cereal, and flaxseed meal. Mix well to combine.
  6. If using, stir through Base Kids powder until evenly distributed.
  7. Fold in choc chips.
  8. Press the mixture firmly into the lined tray (I also press some choc chips in to the top at this stage)
  9. Refrigerate for around one hour or until set.
  10. Slice into bars and enjoy!

Tip: Press the mixture down firmly to help the bars hold together perfectly.
